Nut milk is truly beautifully elegant. I know that is probably too many descriptives for milk, but wow, it does shine. It seems homemade bread is getting the attention these days. However, I am here to say let's do not forget the other family member, the homemade nut milk. While it takes some thought to prepare, it is worth it. After making it, I usually sit back and think about how easy, inexpensive, healthier, and delicious it truly is. Ok, enough talking. Below are the ingredients you will need and the step-by-step.
Ingredients:
1 Cup of Almonds
4 Cups Filtered Water
1 Tlb of Honey (optional)
1 Tbsp of Vanilla (optional)
2 Squares of Cheese Cloth
Making:
1. Soak 1 cup of almonds in a few cups of water overnight.
2. In the morning, drain and rinse the almonds.
3. Add the almonds and 4 cups of water to a Vitamix or blender. If you want flavored milk add honey and vanilla. Blend.
4. Add two pieces of cheesecloth to a vessel for filtering the milk. We used a Chemex.
5. Pour the milk over the cheesecloth until full and keep repeating. Stir the non-filtered milk often to keep the liquid moving through the cheesecloth. Squeeze the remaining out of the cheesecloth. Pour into a vessel and refrigerate for enjoying.
It is lovely over a bowl of Walnut Granola.

This granola makes an excellent snack, breakfast, and if it is simply one of those days a lovely dinner in bed.
Ingredients:
8 Cups of Organic Rolled Oats
1/2 Cup Maple Syrup
1/4 Cup Honey
1 Tsp Salt
1 Tsp Cinnamon
1/4 Cup Walnut or Coconut Oil
1 Cup Chopped Walnuts
Other Additions:
Chia Seeds
Sesame Seeds
Shredded Coconut
Preheat oven to 325 degrees. Mix the dry ingredients. Add wet ingredients and stir together. Place parchment paper on a large baking pan. Spead the ingredients on the pan thick. Bake for 20-30 minutes until golden brown.

While taking a day (well or ten) to make a recipe from the French Laundry is lovely and luxurious, simple is sometimes the best. As each of us slowly but surely begin to cozy in with family and friends, I thought it would be a beautiful distraction to share a simple, yet oh so delicious brunch.
Hopefully, you grabbed the eggs instead of the toilet paper last time you were at the grocery store stocking up. We may have two dozen happily awaiting us in the fridge so feel free to pop in and we will toss them to you. I hope your 6 feet catching game is on.
It is as simple as four ingredients:
1 Egg
1 Tsp Walnut Oil
1 Pinch of Red Pepper Flakes
1 Pinch of Sea Salt
Preheat the oven to 350 degrees. Coat the ramekin(s) with walnut oil (makes for an easy CLEAN up). Crack an egg into the ramekin. Add a pinch of salt and red pepper flakes. Then bake for 10-15 minutes pending on preferred texture.
Serve with these delicious waffles and a hot drink of choice.

If we are not skiing, taking a stroll with our dogs, or traveling somewhere exotic, you can catch us lounging in cashmere and cooking.
One of my favorite things to make (ok, beyond pizza) on the weekends solo or with the family is pancakes and waffles.
This recipe is inspired by Amy Chaplin, who wrote the cookbook Whole Food Cooking Every Day. I love it for many reasons, but mostly because it is challenging to find a delicious texture when baking without dairy and gluten.
The recipe is an excellent foundation for waffles or pancakes, adding fruits and veggies, and to top it all off, it makes plenty for snacking, eating that day, and freezing for the week.
Ingredients:
1 Cup of Nut Flour. We use Almond or Walnut.
1.5 Cups of Oat Flour (best when you make it at home but to make it easy purchasing oat flour is great as well)
1/2 Cup Millet (can add more oat or nut flour instead)
1 Tsp Baking Powder
4 Med Eggs
1 Cup Coconut Milk
1 Cup Orange Juice or Coconut Water
¼ Cup Walnut Oil
¼ Cup Coconut Oil (can use all walnut oil)
Mix the wet ingredients and then add dry ingredients. Add shredded carrots, applesauce, blueberries or any fruit to you liking for an extra boost for the week.
